I have been using coating chips for my cake icing but the icing falls off. What am I doing wrong?

Coating chips will melt

Hi Natasha.

This is a common question we receive. You are not doing anything wrong. Coating chips consist mainly of fat and sugar. When cooled, the fat solidifies. When warmed up, it melts. That's why you have to heat the chips up to use them for spreading as an icing. Florida is warm and humid so it is no wonder the icing is melting.
